The truffière and farm
The Fish River Truffière is a family owned and operated business located in the beautiful O'Connell valley in central west New South Wales.
The Fish River has shaped the landscape around our farm including the the slope and soil in which our truffles grow.

The Truffière is one of the first to be established in the NSW (2003) and over the years has supplied fresh truffle (Tuber melanosporum) to many of Sydney's hatted restaurants and premium truffle product producers. Some of these include Mat Moran's Aria, Iceburgs and even Pepe Saya's butter when he was making truffle butter.

We use regenerative methods to care for our pastures and hope to leave our farm to the next generation of farmers better than we found it.

Our Truffles
Truffles really are evidence of mother nature’s glory and complexity.
Fish River Truffles are the black winter truffles (Tuber melanosporum) and they are available usually around the second to third week of June until the middle of August.
We think diversity is key to good agriculture so we have focused on growing our truffles under a variety of trees including hazelnut, French and English oak trees.
One of the most exciting aspects of our truffle journey is being able to share some of the knowledge we pick up on the way through our blog.
Its a bit different to other food blogs because it combines knowledge from our career as a psychologist with some of the incredible things we are learning about our amazing truffles.
